Laksa Sarawak




Here I would like to share another recipe of my all time favorite food call Laksa Sarawak. It is basically a noodle base food & it is one of the famous food among the Sarawakian. I had tried making it myself once & the outcome is not really bad. It taste quite nice. So here are the recipe & hope you enjoy the
taste of it.


LAKSA SARAWAK


Ingredients:
  • Laksa paste (350g)
  • Chicken stock (2 litres)
  • Thick coconut milk (250ml)
  • Vermicelli noodles (400g)
  • Beansprouts - Blanched (50g)
  • Chicken breast - Cooked and shredded
  • 5 large prawns - Cooked and shelled
  • 2 eggs - Made into omelette & shredded
  • 2 stalks coriander - Chopped
  • Limes - Halved (1 lime per serving)
Methods:
  • Boil the laksa paste in the chicken stock for about 15 minutes and then strain into a pot
  • Add the coconut milk and stir until well mixed
  • Season to taste with salt and sugar
  • Blanch the dried vermicelli with hot water to soften
  • Place noodles in a bowl and add the chicken & prawns on top
  • Ladle hot laksa gravy over
  • Garnish with the shredded omelette, coriander & lime halves

The only thing missing in this recipe is the sambal. Basically the sambal is made from belacan (shrimp paste) but I'm not really good in making one. If anyone had the recipe on how to make a sambal for the laksa do share it with me.
